On the edge of Apeldoorn's centre, with the Veluwe as its immediate surroundings, stands the mansion Krijt calls home. High ceilings, a conservatory full of light and, beneath the house, a vaulted cellar where our wines rest.
In that setting we cook a kitchen that begins close by and reaches far: cosmopolitan, with acidity and spice as its signature.
Krijt grew out of the vision of three-star chef Jacob Jan Boerma: a restaurant where talent is given the room to grow. Day-to-day leadership is in the hands of Edwin and Michèle Franken-van de Water, who together with co-owners Kim Veldman and Jacob Jan Boerma share their knowledge and passion with a new generation. Their shared background at the former three-star restaurant De Leest in Vaassen is the foundation on which craftsmanship is passed on, creativity is sparked and young people show what they are capable of.
Edwin leads the kitchen, Michèle the house and the cellar. Together they set the course: a kitchen with a signature of its own, and hospitality that feels self-evident.
They learned their craft at the former three-star restaurant De Leest in Vaassen. Together with co-owners Kim Veldman and Jacob Jan Boerma, they now pass that craftsmanship on to a new generation.
